Vermeer
A dutch style, natural rind cheese that has the creaminess of gouda with the nuttiness of an alpine emmenthaler. Vermeer melts very well and is a great in soups, fondue, sauces, or sandwiches. It pairs quite nicely with Dream Weaver wheat beer from Troegs or Weyerbacher's Blithering Idiot barley wine.

Dragon's Breath
Keswick's take on a hot pepper jack. Creamy and smooth, it melts well. A blend of jalapeno, habanero and birdseye peppers make this a cheese to remember. Great melted into chili, in a salsa dip or over your grass-fed burger.
Hot, try with caution! If it's too hot clear your mouth with Swashbuckler Brewing's Gold Ale, Victory Brewing Company's Prima Pils, Roy Pitz Brewing Ludwig's Revenge or Lovitz Lager.

Wallaby
A natural rind cheese unique to our creamery that is named after a special cow. It has a fresh lactic flavor with slight citrus notes and a lovely light mushroomy rind. Wallaby is great with pears or apples or as a fabulous grilled cheese. Enjoy it with cider or Victory Brewing Company's Hop Wallop.

Lesher
A British-style cheese in the Cheddar family. Aged 4 months in yellow cream wax. Lesher is delightfully creamy and tangy with a slightly flaky texture and fruity notes. A great addition to your cheese plate or for snacking. Pair with brown ales like Troegs Rugged Trail, Rieslings or sparkling wines.

Cheddar
We produce our cheddar using traditional English methods and age it in black wax for three months. A complex full flavor that is pleasantly sharp with a sweet and nutty finish and a nicely creamy texture. Our cheddar pairs nicely with everything from a pastured burger to local apple pie. Wash it down with Troegs Dead Reckoning Porter, Swashbuckler brewing Red Sea Amber Ale, or a nice sauvignon blanc.

Blue Suede Moo
Our homage to British Stilton. A classic blue that is a complex and nuanced cheese with soft sweet notes of chocolate and stout and a distinct mushroomy accent. Blue Suede Moo is a unique addition to your cheese plate. Try some melted over your grass-fed steak. Pairs nicely with Troegs Java Head Stout or Troegenator, Swashbuckler Brewing's Blackwater Stout, Roy Pitz Brewing Chicken Leg Oatmeal Stout, and Adams County Winery Cabernet Sauvignon.

Carrock
We hand select the best wheels of our cheddar and age them for ten months while rubbing the rind with extra virgin olive oil. The end result is well worth waiting for as it is sharp, dry, nutty, spicy, with casein crystals sprinkled throughout. Goes great with everything, but wash is down with some of Troeg's Brewing Java Head Stout for a local treat with British flavor.

Tommes
Our line of Alpine peasant-style cheeses. All of our tomes share a sweet buttery beginning with a slightly nutty finish. However, our partnerships with local breweries and vineyards enable us to wash the rinds of some tommes to produce cheeses are uniquely local.

Tomme Sweet Tomme
Our Tomme cheese that we allow to grow a natural rind that we brush weekly for two months. This encourages the natural flora in our aging room to impart a lovely mushroomy odor to the rind. A classic tomme with a sweet, butter initial flavor followed with a nutty finish. Pairs well with Roy Pitz Brewing Gobbler Lager or Troegs Brewing Pale Ale.

Wash You Were Here
We wash our tomme cheese with a mild salt brine the give the rind a lovely straw color with some pink and orange highlights. The rind has a rich beefy aroma and the cheese has a strong walnutty flavor with a wonderful creaminess. Pairs nicely with Troegs Brewing Pale Ale, or for some extra punch try Troegs Hop Back.

Tommenator
We take our Tomme cheese and wash it weekly with Troegs Brewing Company's Trogenator, their classic double bock. The washing gives the rind a deliciously sweet, malty aroma and imparts a wonderful hoppy finish to the cheese. Like all our Tommes, the rind is edible and this rind is especially tasty. Pairs perfectly with Troegs Brewing Troegenator or Roy Pitz Brewing Company Old Jail Ale.

Happy Jack
Wash our tomme cheese with a traditional English style cider made with Adams county apples and the result is Happy Jack. The apples highlight the sweet fruitiness of the cheese while bringing out a warm earthy finish with notes of hazelnut. The rind has a nice light golden color with hints of pink and red. This cheese complements Troegs Sunshine Pils or Dream Weaver Wheat quite nicely.

Mad Tomme
Our Mad Tomme is creamy, with small eyes and aged for three months. We wash it weekly with Mad Elf Ale, Troegs Brewing Company's one of kind holiday cherry brew. With a tart, spicy aroma and a lactic fruitiness this cheese is a welcome addition to your cheese plate. Makes for a great picnic lunch with a loaf of bread, some apples and Roy Pitz Brewing's Best Blonde Ale, Troegs Brewing Sunshine Pils, or go for the crazy mad experience and have a chalice of Troegs Mad Elf Ale.

Feta
Our Feta provides the best of both worlds, firm enough to crumble easily yet with a smooth creaminess that allows for slicing. It is rich and tangy with a nice salty bite at the end.

Tomato and Basil Feta
The fresh bite of tomatoes with the earthiness of basil (all local) give this feta the right amount of kick. Feta, tomatoes, and basil, how can you go wrong? Excellent for everything and makes a great snacking cheese as well.

Italian Herb Feta
Our plain feta mixed with locally grown and dried herbs from Audia's Farm in Woodbine, MD. Italian Feta has a nice zestiness that works well with any pasta dish or garden fresh vegetables.

Feta de Provence
Feta with a unique blend of local herbs lend a nice aromatic, floral flavor with a hint of lavender. A great topping for any savory dish or for sauces since the flavor is not overwhelming.

Chives and Dill Feta
Locally grown chives and dill make this feta a great topping for freshly steamed vegetables, baked potatoes, or a crisp salad. Pleasantly sharp and tangy with a slight sweetness from the Jersey milk give this feta a nicely full flavor.

Quark
Bavarian in origin, this cheese has the body of American-style cream cheese with the tang of crème fraiche. Can be used in sweet or savory recipes. No fillers, sweeteners or stabilizers, just probiotic culture and salt.
No rennet used.

Whole Milk Ricotta
Made fresh each week. A firm, creamy ricotta that is great for cooking or desserts. Try mixed with pesto for an easy appetizer or use to top grilled peaches. We use only our own Jersey cow's milk, citric acid and salt.

Yogurt
Made with only two ingredients, milk and culture, this yogurt if full of probiotics and flavor. Our yogurt has a tart, tangy flavor that is great for middle eastern cooking or baking and a soft body that mixes well into sauces and dressings.

Chocolate Pudding
Our pudding has a deep, rich flavor with just the right amount of sweetness. We use organic, fair trade vanilla, raw sugar, and cocoa from Wilbur's Chocolate Company. The only thickeners we use are cornstarch and arrowroot powder. It is cooked for several hours to bring out the intense flavors and to give it a
thick body.
